Cabbage Soup
Ingredients
1 tbsp olive oil
1 onion, chopped
2 garlic cloves, minced
3 carrots, sliced
2 celery stalks, chopped
1/2 head green cabbage, chopped (about 4 cups)
1 can (14 oz) diced tomatoes
6 cups vegetable or chicken broth
1 tsp salt, 1/2 tsp pepper
Optional: 1/2 tsp smoked paprika or chili flakes
Preparation
In a large pot, sauté onion and garlic in oil for 2–3 minutes.
Add carrots and celery; cook 5 minutes.
Add cabbage, tomatoes, and broth. Bring to boil.
Reduce heat and simmer 25–30 minutes until cabbage is soft.
Cool before portioning into freezer-safe containers
