Greek Style Pan Roasted Lemon Potatoes

Crispy Greek lemon potatoes pan-roasted with herbs and olive oil

Ingredients
1 lb. Potatoes Peeled and Quartered
1/4 cup lemon olive oil
2 tsp. Salt
1 tsp Freshly Ground Pepper
1 Lemon Juiced
1 Tbsp. Dried Oregano
1 Tbsp. Garlic Powder
Preparation
Bring 1 qt of water to boil
Peel and wash a one-pound of potatoes. Cut the potatoes into quarters and set in pot to boil until tender to fork but careful not to overcook. Drain potatoes.
Put half of the olive oil into frying pan and set at low heat
Put cooked potatoes in the frying pan.
Juice one lemon and pour over the potatoes. Cut the lemon peel into small chunks and also add to the pan.
Add olive oil, salt and pepper, oregano, and garlic powder to the pan. Stir gently with a large spoon.
Pan Roast potatoes on a frying pan until golden brown turning to keep potatoes intact mindful not to let olive oil burn (starts to smoke)
Potatoes are ready when the outsides are crispy and insides are fork tender.
Taste a bite and correct salt and pepper. Garnish with parsley and lemon zest and serve.
