Our culinary cooking journey with our staff continues. This time we have selected a recipe to help pass a chilly day or evening in our cold mountain air and can easily replicate back home. A unique stew called “birria”. It is a versatile and flavorful Mexican dish that originates from the state of Jalisco, traditionally made with goat or lamb but now also commonly prepared with beef. It's characterized by its rich, spicy, and aromatic consommé. For this class each student will cook their own birria on individual clay Mexican pot over and individual stove. Each person will select lamb, chicken, or vegetarian birria.
